Mexican Chickpea Chilli

Serves 2
Ingredients :

  • 1 tin of organic chickpeas, drained and rinsed
  • 1 tin of organic chopped tomatoes
  • Handful of cherry tomatoes
  • 2 peppers (any colour but I prefer red and yellow)
  • 1 red onion, chopped
  • Any other veggies you want, I added mushrooms too
  • Small tin of sweetcorn
  • Handful of frozen peas
  • 1 or 2 tsp chilli flakes (or as much as you dare!)
  • 3 garlic cloves, crushed
  • 1 tsp coconut sugar
  • 1 tsp paprika
  • Zest and juice of 1 lime
  • 1 avocado, chopped
  • Something to serve it with e.g. Rice, Bread or baked potato (as per photo)
  • Salt and black pepper
  • 2 chopped Spring onions
  • Handful of fresh coriander

Method : 

  • Heat a large frying pan on medium heat
  • I usually fry in water with a lid on, but you could add a little coconut or olive oil if you prefer
  • Cook onions until soft (not browned)
  • Add garlic
  • Add peppers and cherry tomatoes (plus any other veggies you want)
  • Once veggies have softened, add chickpeas, peas, sweetcorn and tinned tomatoes
  • Cook on high heat for 5 minutes, then reduce to a simmer
  • Season with salt, pepper, paprika, chilli flakes and coconut sugar
  • Simmer for around 20 minutes, checking half way and adding a little water if necessary, then freshen with fresh lime zest, lime juice, chopped Spring onion and a handful of fresh coriander
  • Serve with chopped avocado (or guacamole if you prefer). You can either enjoy it on it’s own, or add rice, bread or potato
