‘Cheesy’ Panfried Mushrooms, Red Onion & Sugarsnap Peas on Baked Potato *Dairy Free*

Serves 1


Ingredients :

  • 1 or 2 baked potatoes (depending on how hungry you are!) – skin cleaned
  • Handful of sliced button / chestnut mushrooms
  • One small red onion, halved and sliced thinly
  • Handful sugarsnap peas
  • 1 tbsp Engivita nutritional yeast
  • Salt & black pepper
  • Handful of rocket leaves
  • Couple of chopped cherry tomatoes

Method :

  • Bake potato(es) in the oven until cooked. 1-2 hours depending on size
  • Heat frying pan with a small amount of extra virgin olive oil on medium heat
  • Fry onions until soft
  • Add mushrooms and fry also. You may need to add some water to prevent sticking
  • Add sugarsnap peas
  • Season with salt, pepper and Engivita nutritional yeast
  • Serve on the baked potato with rocket and cherry tomatoes on the side
